Honey Stung Chicken

Ingredients:

For Brine:

1 gallon                       Water

¾ cup                          Salt

¼ cup                          Sugar

1 Tbls                          Black Pepper Corns

1 tsp                            Allspice (whole)

1 tsp                            Herbs de Provence

For Chicken Rub:

2 Tbls                          Jerk Seasoning

2 Tbls                          Paprika

1 tsp                            Garlic Powder

½ tsp                          Black Pepper

Chicken Glaze:

½ Cup                           Honey Stung Sauce

Directions:

1.)    Heat all ingredients for the brine on the stove until salt and sugar dissolve.

2.)    Cool completely in large bowl.

3.)    Add whole chicken, let it brine for 5-8 hours.

4.)    Remove chicken and pat dry with paper towels.

5.)    Season with rub.

6.)    Place on a wire rack and sheet pan. (line sheet pan with silpat or parchment paper for easy clean up)

7.)    Bake at 350 degrees for 1 hour and 15 minutes or until internal temperature reaches 165 degrees.

8.)    Remove and glaze with ½ cup of Honey Stung Sauce, bake for an additional 10-15 minutes.
