Beach BBQ Roasted Cauliflower/ Chimichurri Seasoned Warm Veggie Salad

Ingredients:

Roasted BBQ Cauliflower-

1 Head                           Cauliflower

1 Tbsp                         Oil

TT                               Salt & Pepper

½ Cup                           Beach BBQ Sauce

 

Warm Vegetable Salad-

2 Cups                          Shredded Mixed Vegetables (We used a pre-shredded mix in a bag)

-          Carrot, Broccoli, Kale

1 Tbsp                        Oil

1 Tbsp                         Butter

1 Tbsp                        Chimichurri Spice Blend

1 Tbsp Parmesan Cheese

TT                               Salt & Pepper

Extra Parmesan Cheese for Garnish

Directions:

Roasted BBQ Cauliflower-

1.)   Preheat oven to 400 degrees. Cut cauliflower into flowerets and coat them with 1 Tbsp of oil and salt and pepper in a medium size bowl. Bake for 20 min. or until tender and golden brown.

2.)   Return cooked cauliflower to a medium bowl and toss with Beach BBQ sauce.

Warm Vegetable Salad-

1)     Heat a large sauté pan over medium-high heat. Add oil and butter until melted. Add 2 cups shredded mixed vegetables. Sauté until tender 6-8 min.

2)     Season with Chimichurri spice and salt and pepper.

Server and enjoy!
