Island Lettuce Wraps
Ingredients:
1 lb. Ground Turkey
3 Tbls. Island Sauce
1 Cup (Cooked) Red Quinoa
1/2 Cup Onion (Chopped)
1/4 Cup Bell Pepper (Chopped)
1/4 Cup Carrot (Chopped)
6/8 Leaves Bib Lettuce
1/4 Cup Pineapple (Diced, for garnish)
To Taste Salt and Pepper
Directions:
Saute onion, bell pepper, and carrot in large saute pan on medium for 5 to 7 min. remove and set aside.
Add turkey to saute pan and brown, season with salt and pepper. Return vegetables to the pan, and add Island Sauce. Fold in cooked red quinoa.
Build lettuce wraps, bib lettuce first, fill with turkey mixture and garnish with diced pineapple.
Serve and enjoy!
