Island Sauce Enchiladas

Ingredients:

 4 Tbls                             Island Sauce

 1 lb.                                 Ground Beef

 1 packet                        Taco Seasoning

½ Cup                             Bell Pepper (diced)

½ Cup                             Onion (diced)

½ Cup                             Green Chile Sauce

1 Tbls                               Garlic (Minced)

1 Cup                               Cheddar Jack Cheese (Shredded)

 1                                        Avocado (Sliced)

8 Small                             Flour Tortillas

Directions:

1.)  Brown ground beef in a large skillet, add in bell pepper, and onion, sauté for an additional 5 min.

2.)  Add in taco seasoning packet and follow directions on the package. Mix in green chile sauce and garlic, cook an additional 2 min. remove meat mixture from heat.

3.) Lay out tortillas and wrap with a portion of meat mixture and helping of shredded cheese inside. Place rolled enchiladas in a deep baking dish (9” x 13”), spread island sauce on top and cover with cheese.

4.) Bake at 350 for 10 min, broil on high for 3 min or until cheese is browned and bubbly.
