HoHoHo Spiced Blueberry Cheesecake Bars

A twist on the classic cheesecake bar, this time with a spiced crumble topping and crust, thanks to our HoHoHo Spice, and blueberries. Brace yourself for a burst of fruity goodness, a velvety cheesecake layer, and a crunchy crumble kissed by the unique warmth of our exclusive spice blend.

Ingredients:          

Crust and Crumble:

16 oz Graham Crackers

1 Tablespoon Flour

1/2 Teaspoon Salt

6 Tablespoons Butter, melted

3 Tablespoons Beachfront Foods HoHoHo Spice

Filling:

8 oz Cream Cheese, softened

1/2 Cup Sugar, divided

1 Egg

4 Cups Blueberries (Frozen or Fresh)

1 Tablespoon Cornstarch

Directions:

  1. Preheat your oven to 350°F and line a 9” square pan with parchment paper.

  2. Combine all the crust and crumble ingredients except the butter in a food processor, working in batches, if needed. Pulse until crumbs are fine and then transfer to a bowl and mix in butter.

  3. Press 2/3 of the mixture into the bottom of the lined pan and bake for 15 minutes. Reserve other 1/3 of mixture for later.

  4. Prepare the filling by mixing the cream cheese, 1/4 cup of sugar and egg together with a hand mixer until smooth.

  5. Mix together the blueberries, 1/4 cup of sugar and cornstarch.

  6. Top baked crust with the cream cheese mixture, using a spatula to spread evenly over the crust. Top with blueberries.

  7. Finally, top the pan with remaining crust mixture, irregular clumps work great and give the bars a crumble appearance.

  8. Bake for 30 to 40 minutes or until blueberries are bubbling.

  9. Chill for 1 hour in the fridge before cutting and serving.
