Spicy Jerk Corn Salad

Sweet summer corn and our Caribbean Jerk Spice make a refreshing salad with a kick. Use corn cut right off a fresh cob or grill it and then cut it into the salad for extra char flavor.

Ingredients:          

1.5 tablespoons Beachfront Foods Caribbean Jerk Spice

4 cups corn kernels (raw or grilled)

1/4 cup red onion, diced

3 tablespoons olive oil

2 tablespoons lime juice or red wine vinegar

1 tablespoon jalapeño or serrano pepper, minced

1/3 cup feta, crumbled

salt, to taste

cilantro or micro greens, to taste

Directions:

  1. If you are grilling the corn on the cob, grill and set aside to cool. Once cool or if using raw ears, cut the corn off the cob and place in a large bowl.

  2. Stir into the corn the Beachfront Foods Caribbean Jerk Spice, red onion, olive oil, lime juice or vinegar, pepper and feta.

  3. Taste and add salt and cilantro and micro greens to your liking.

  4. Serve immediately or chill until ready to enjoy!
