Spicy Sweet Potato Bites
These crispy bites are rolled together with mashed sweet potatoes, sharp cheddar cheese and a little heat from our Caribbean Jerk Spice. Dredged in flour, egg and bread crumbs and then baked until crispy, they’re a fun fall snack to enjoy with a side of our Honey Stung Sauce for dipping.
Makes about 12 Bites.
Ingredients:
1.5 pounds Sweet Potatoes, cut into 1 inch slices
Salt, to taste
2 ounces Sharp Cheddar, grated
1/4 cup Flour
2 teaspoons Caribbean Jerk Spice
For the Assembly:
1/2 cup Flour
1 Egg, beaten
1/2 cup Bread Crumbs
2 tablespoons Vegetable Oil
Directions:
Preheat oven to 400F, slice sweet potatoes and season with salt. Roast until soft, about 30 minutes. Or start with sweet potato puree.
Remove the sweet potatoes from the oven, allow to cool for about 20 minutes.
Once cool enough to handle, remove skins and mash with a fork. Stir in cheese, flour and Caribbean Jerk Spice. Taste and add more salt, if needed.
Form the mixture into 1 inch rounds. Place in the fridge.
Preheat oven to 400F.
Setup dredging station, putting flour in one bowl, the beaten egg in another and the bread crumbs in a third. Finish with a skillet at the end of the up, containing the oil.
Roll each sweet potato round in flour, then dip in egg and roll in breadcrumbs. Then place in skillet and roll around to coat in oil
Once all of the mixture is formed into coated bites, bake until crispy, about 25 minutes.
Serve immediately with Honey Stung Sauce for dipping.
