Honey Stung Potato Salad
This is not your usual soggy, mayo-laden potato salad. This potato side dish is made with crispy, roasted potatoes and tossed with our honey-mustard sauce. A true winner for summer BBQ’s or winter potlucks!
Our Honey Stung Sauce is the perfect mix of sweet honey, tangy mustard and some spicy from scotch bonnet peppers.
Ingredients:
1 Pound Red or Fingerling Potatoes, cut into 1-inch pieces
3 Tablespoons Olive Oil
1/4 Cup Scallions or Red Onion, diced
1/4 Cup Herbs or Swiss Chard of your choice, chopped
1 Cup Cherry Tomatoes, optional
(If you’re making this in the summer, these are a must!)
1/4 Cup Beachfront Foods Honey Stung Sauce
Salt and Pepper, to taste
Directions:
Preheat your oven to 400ºF .
Toss potatoes and tomatoes (if using) with olive oil, salt and pepper. Roast until tender on the inside and once the edges have started to crisp.
Transfer potatoes to a bowl and toss with the onions and herbs or Swiss chard. The heat of the potatoes will slightly wilt the greens in a delicious way. Finally toss all with Honey Stung Sauce. Season to taste and serve.
