Pineapple BBQ Glazed Meatballs

These meatballs are a play on jerk chicken. Serve them over rice with a topping of cilantro. Juicy meatballs glazed in a complex-tasting sauce, made easy with our fruity, spicy, sweet Beach BBQ Sauce. The not-so-secret secret is the pineapple in our sauce.

Ingredients:          

1 Pound                   Ground Chicken

1 each   Red Onion, diced                 

1 each          Egg, beaten

1/4 Cup         Breadcrumbs

2 Tablespoons Beachfront Foods Caribbean Jerk Spice

1/2 Cup Beachfront Foods Beach BBQ Sauce

2 Cloves Garlic, minced

For Serving:

Steamed Rice

Cilantro, chopped

Directions:

  1. Preheat your oven to 375ºF .

  2. Combine the ground chicken, onion, egg, breadcrumbs and Jerk Spice in a bowl. With wet hands, form the meat into about 1-inch meatballs.

  3. Bake meatballs until brown on the outside, 10-15 minutes.

  4. Once cooked, remove meatballs from over and transfer to the stovetop with the BBQ Sauce and garlic. Cook over medium-low heat for a few minutes, until meatballs are coated and glazed.

  5. Serve with rice and cilantro.
